Make your own corn tortillas and you will thank me for it. This recipe will turn you into the ultimate grilling goddess.
For this recipe of making your own tortillas you’re going to need a tortilla press and wax paper. I pre-cut the wax paper into even squares to make it easier during pressing. I also used a rocket stove for grilling the steak and shrimp which is a small wood fired stove that shoots heat upwards in a small cylinder fastened with a custom grill attachment. It is a very unique speciality item that not everyone has. That being said, you can just as easily use your campfire grill grate, a gas grill or a regular sized grill. I used metal skewers for the shrimp because the metal doesn’t bend or catch fire as much as the wooden ones.
Hand Made Corn Tortillas

Ingredients
- 1½ cups masa harina
- ¼ teaspoon salt
- 1/4 cup Lard
- 1 cup hot water
- Maza Flour for kneading
Instructions
- Combine the masa and lard in a bowl; stir in the salt. Slowly
add in the water while mixing with your hand until the dough
forms a ball like play-dough. - Turn the dough onto a lightly floured surface, and knead
until it is smooth and elastic. Form dough into 1 inch balls
by rolling with your hands. - Place a ball between 2 sheets of wax paper, and press down
with a tortilla press Gently peel back the wax paper. Repeat for all the balls. - Fry the tortillas in hot oil on low to medium heat. Flip and
cook on both sides.
Guacamole
Ingredients
- Two Large avocados
- 1/2 cup chopped red onion
- 1/2 cup chopped red onion
- 1/2 of a Jalapeno
- 1 tsp sea salt
- 1 sprinkle of cilantro
- The fresh juice of one lime
Instructions
- Chop the guacamole in half. Remove the pit. Make grid-like slices into the center. Scoop all the insides out into a bowl.
- Chop up red onion, cilantro, jalapeno and add to the bowl.
- Add a squeeze of lime juice into the bowl.
- Sprinkle sea salt and toss gently. Continue to season to taste.
- OPTIONAL: manually mash with a potato masher.
Taco Fillings
Ingredients
- 2 poblano peppers, sliced
- 1 T-bone steak, grilled and sliced
- 1 Lb of shrimp, grilled on skewers
- 2 ears of whole corn on the cob, grilled and cut
Instructions
- Sauté the sliced peppers in the cast iron on medium high heat until tender. Remove and set aside.
- Peel shrimp and place onto skewers. Sprinkle with lime juice and paprika.
- Season the steak with paprika, pepper and garlic salt.
- Place Steak, shrimp skewers and corn into a hot grill.
- After everything is cooked, take it off the grill and slice onto small pieces.
- Shuck the ears of corn and remove all hairs.
- To build to tacos: take your corn tortilla, smear guacamole onto the bottom, add poblano peppers and corn. Place steak and shrimp on top and fold the taco over to hold all ingredients in place.
- Sprinkle with hot sauce or sour cream, repeat and enjoy!
