Smokey S’mores Brownie Skillet with Bourbon Cherries

 PREP TIME: 10 mins COOK TIME: 30 mins TOTAL TIME: 40 mins 

Ingredients

Brownie Base

  • 2 eggs
  • ½ cup all-purpose flour
  • ¼ cup  cocoa powder
  • ½  teaspoon salt
  • ½ cup unsalted butter melted
  • ½ cup brown sugar packed
  • 1 semisweet dark chocolate bar 

Boozy Cherries

  • 12 oz  Bag Frozen Pitted Cherries
  • 1/3 Cup Cane Sugar
  • ¼ Cup corn starch or tapioca flower
  • 3 Tablespoons Bourbon
  • 1 Tablespoon of high quality bourbon vanilla

S’mores Toppings

  • 1 small (7oz)  jar of Jet Puffed marshmallow fluff 
  • 1/4 cup of biscoff cookies- crushed
  • a handful of teddy grams

Instructions

  1. In a cast iron pan combine the cherries, bourbon, sugar and cornstarch. Mix and simmer on medium heat for five minutes until thickened. Take your pan off the heat and set aside.
  2. Preheat oven to 350 degrees. If outdoor camping, build your hot coals up to medium temperature. Butter your cast iron pan. Set aside.
  3. Melt your butter over a skillet before stirring in your brown sugar, eggs and vanilla.
  4. Combine flour, cocoa powder, and salt and mix well before adding it all to your wet ingredients.
  5. Follow with a layer of bourbon cherries. Spoon some of the brownie mix over top of the cherries to make a top layer.
  6. Bake for 30 minutes in the oven or over the campfire.
  7. Once the brownie is baked, top with spoonfuls of Marshmallow fluff and sprinkle with Biscoff cookie crumbs and dark chocolate chunks. Torch the marshmallow until charred and gooey. Then for the final touch: add a soaked cherry to the middle of your marshmallow pools.
  8. Slice warm and enjoy!
