Savory Irish Potato Pie- Dutch Oven Recipe

Irish potato pie is a type of traditional Irish favorite for many good reasons. It’s cheap and easy to make which is why I found this to be the perfect campfire meal for a cozy fall outdoor excursion. You can bake it and save the leftovers in your cooler and it will keep for some nice leftovers. None the less, the golden flakey crust and savory cheesy potatoes combined with juicy bacon is so simple, savory and delicious that I swear from now on, I will be be baking this pie for every occasion: a simple weeknight dinner, a hearty campfire meal or even as a holiday party showstopper!

 PREP TIME: 15 mins COOK TIME: 30 mins TOTAL TIME: 45 mins 

Ingredients

  • salt and pepper
  • 2 teaspoon garlic salt
  • 2 teaspoon paprika
  • One layers of defrosted pie crust
  • 4 medium potatoes, peeled
  • 1 lb bacon
  • 1 large onion, chopped
  • 2 cups shredded sharp chedder cheese
  • 3/4 cup heavy cream
  • 1 & 1/3 cups heavy cream

Instructions

  1. To prepare your potatoes, peel them and then slice them into thin slices. Set aside.
  2. Slice your bacon and chop your onion into small pieces. Fry them in the cast iron pan until soft and fragrant.
  3. Add the potatoes, garlic salt, pepper, and paprika to the skillet. Sauté the mixture for 5 minutes over medium heat. Cook them until slightly soft but still firm.
  4. Prepare your pre-made (or homemade) pie crust by slicing it into strips on your cutting board.
  5. Pour the heavy cream into the mixture before sprinkling a nice even layer of shredded cheese.
  6. Now make your pie crust over top of the filling (How to make a basket weave pie design)
  7. Bake in a dutch oven over a small tamed fire with coals on top for approximately 30 minutes, or until you have soft potatoes and you have a crispy golden crust.
  8. Remove the Irish potato pie from the fire, and top with additional cheese if desired. Let cool for 2 minutes before cutting a nice big slab. Serve with an ice cold beer as your delicious campfire snack.
