Steak and Burrata Focaccia Sandwich with Hand Ground Pesto

This sandwich is great to pack away in your lunch box for a casual day hike, a romantic picnic, a relaxing day at the beach or even a family gathering.

This sandwich is as pleasantly filling as it is flavorful. The creamy burrata compliments the rich succulent steak in the best possible way. And to be honest, up until now, I’ve never made fresh pesto in a mortar and pestle before. Let me tell you, the difference in flavor is a world away in comparison to using a food processor.

 PREP TIME: 20 mins COOK TIME: 15 mins TOTAL TIME: 35 mins 

Ingredients

PESTO
4 cloves garlic, peeled and chopped
¼ teaspoon kosher salt
1 large bunch fresh basil
2 T fresh Chives, chopped
2 T fresh Tarragon, chopped
3 tablespoons pine nuts
2 ounces finely grated Parmigiano-Reggiano cheese
½ cup mild extra-virgin olive oil

SANDWICH

Fresh Focaccia Bread, sliced in two
1/2 LB london broil steak, grilled
1 slab of Fresh burrata123

Instructions

The Pesto

1.Pick the basil leaves from the stem and gently stack them into a pile. Roll the pile into a sphere and slice thinly into small strips. 

2. Pick leaves off the tarragon and place into a pile. Set aside. 

3. Finely chop the chives and garlic. Set aside. 

4. Place all your fresh herbs, pine nuts and spices into the mortar. Juice the lemon on top. 

5. With the pestle, grind the herbs and juice together, crushing and pounding on the leaves until you get a thick paste.

6. Grate the parmesan cheese over top and gently fold into the pesto. 

The Sandwich

1. Place your seasoned steak on the grill. 

2. Slice your focaccia bread in half. Brush with butter and leave on the grill for one minute or just until it has grill marks. 

3.Once your steak is cooked to your liking. (I like mine medium rare) take it off the grill and slice it into thin strips. 

4. Take your bread off the grill. Smear both sides with fresh burrata. Top with your fresh pesto. 

5.Add your steak strips to the sandwich and top with both sides.

6. Eat, relax and enjoy! 

***Make sure you use fresh focaccia bread. It will make the sandwich so rustic and flavorful. Just like the sandwiches they sell on the streets of Florence, Italy!
